Saffron and Almond Tart

Ingredients:

For the cookie base:

  • 200 g cookies
  • 100 g melted butter

 

For the filling:

  • 1 tablespoon saffron threads
  • 200 ml milk
  • 200 g ground almonds
  • 150 g sugar
  • 200 g cream cheese
  • 200 ml whipping cream

 

Instructions:

Preparation of the base:

  • Crush the cookies until fine crumbs form.
  • Mix the cookie crumbs with the melted butter.
  • Press this mixture into the bottom of a springform pan.
  • Refrigerate while you prepare the filling.

Preparation of the filling:

  • Heat the milk and add the saffron threads. Let it rest to infuse.
  • In a bowl, mix the ground almonds and sugar.
  • Incorporate the cream cheese into the almond and sugar mixture.
  • Add the saffron-infused milk (make sure to remove the threads first).
  • Whip the cream until soft peaks form and fold it into the mixture.
  • Mix all the ingredients until you get a uniform texture.

Assembly:

  • Pour the mixture over the cookie base in the pan.
  • Smooth the surface with a spatula.
  • Refrigerate the tart for at least 4 hours or until set.

Decoration (optional):

  • You can decorate the tart with more almonds on top or sprinkle some ground saffron for a visual touch.
