Saffron Chicken

Ingredients:

  • 4 chicken breasts
  • 1 tablespoon saffron threads
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup chicken broth
  • 1/2 cup dry white wine
  • Salt and pepper to taste
  • Fresh chopped parsley for garnish

 

Instructions:

  1. In a mortar, crush the saffron with a pinch of salt until you get a fine powder. Then, mix the saffron powder with 2 tablespoons of hot water and set aside.
  2. Season the chicken breasts with salt and pepper to taste.
  3. Heat the olive oil in a large skillet over medium-high heat. Brown the chicken breasts on both sides until golden brown. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the onion and garlic. Cook until tender and fragrant.
  5. Pour the white wine into the skillet to deglaze it, scraping up the golden bits from the bottom.
  6. Return the chicken to the skillet. Add the chicken broth and saffron mixture. Reduce the heat to medium-low, cover, and cook for about 15-20 minutes or until the chicken is cooked through.
  7. Adjust the seasoning with salt and pepper to taste.
  8. Serve the saffron chicken on individual plates, sprinkle with fresh chopped parsley, and serve with rice or potatoes, as desired.
